HeLa Carrot Ginger Power Soup


1 large onion, chopped

4 garlic cloves, minced

1 inch ginger, peeled and minced

1 tsp turmeric

4 cups chicken broth (unsalted) 

2 cups water

2 lb bag carrots, peeled and chopped

1 cauliflower head, cut into florets

4 stalks celery, chopped

1 cup HeLa Nutrition Natural Organic Plant Protein Powder

Salt and pepper, to taste

Parsley or scallions, for garnish 

DIRECTIONS: Makes 6 servings

  • Add chopped onions to pan over medium heat and cook for 8 minutes
  • Add garlic, ginger, and turmeric and cook for 2 minutes, stirring frequently
  • Add broth and water and cover. Increase heat to high and bring to a boil. Add carrots, cauliflower, and celery
  • Reduce heat to medium, simmer until vegetables are tender, about 35 minutes
  • Remove vegetables from heat. Puree vegetables with hand blender carefully until smooth or use blender in batches than return to pot, to form desired soup consistency
  • Stir in HeLa Nutrition Natural Organic Plant Protein Powder, season with salt and pepper to taste, and garnish
