Protein Brownies

INGREDIENTS:

Wet:

1 1/2 cup semi-sweet chocolate chips divided (1 cup to be melted)

1/2 cup coconut oil 

3 eggs

3/4 cup coconut sugar

2 tsp vanilla extract

1 cup all natural peanut butter *optional* 

Dry

1/2 cup HeLa Nutrition Organic Chocolate Plant Protein Powder

1/2 cup gluten-free all purpose flour

2 tbsp cocoa powder

1/4 tsp sea salt

 

DIRECTIONS: Bake at 350F
  •  Preheat oven to 350F
  • Take 1 cup of the chocolate chips, add coconut oil and melt using double boiler method or microwave - set aside
  • Add eggs and coconut sugar and mix for 1 minute or until combined with no clumps
  • Add in melted chocolate mixture, vanilla and peanut butter *optional* 
  • Add remaining dry ingredients
  • Once mixture has come to batter consistency, add in the remaining chocolate chips and sea salt
  • Line an 8x8 pan with parchment paper 
  • Add batter to pan and even out the corners 
  • Add peanut butter to the top and take a knife and work it through the batter *optional* 
  • Put it in to bake for 22-28 minutes. At 16 minutes, sprinkle sea salt on top. 
  • Remove and let it completely cool before cutting into squares
  • Enjoy!
